Crockpot French Onion Soup

When it comes to French onion soup, you have to start by making sure you get the right types of onions.  Sweeter onions, like walla walla and vidalia will make your soup sweeter.  The onions mentioned in the ingredients are what our family has found to give the soup a perfect taste when cooked down.

Ingredients

3 White Onions – sliced

1 Yellow Onion – sliced

1 Bay Leaf

1 tsp Dried Thyme

1 tsp Salt

1/2 tsp Black Pepper

5 cups Beef Stock

1/3 cup brandy (try the small sizes from the liquor store if you don’t store the bigger sizes)

4 tbsp Unsalted Butter, Melted

Recipe

  1. Turn on crockpot and melt butter in bottom of heated pot.
  2. Layer onions and bay leaf in bottom of slow cooker, and stir into butter.  I like to cook the onions a bit in the butter, but you can continue on if you’d like.
  3. Sprinkle on thyme, salt, pepper and beef stock.
  4. Cover crockpot and cook until onions are soft – about 5-6 hours on high temp, and 6-7 hours on low temp.
  5. Once done, season with salt and pepper before serving

 

Serving is for 4, or 8 cups

Traditionally French onion soup is topped with crusty bread and Gruyere cheese, but I don’t really like how it dissolves in the soup, and my kiddos prefer to dip their bread.  So to make this kid friendly, we make grilled cheeses out of the crusty bread and cheese instead.  Super yummy, and even the kids love it!
